The day we decided to create our hotel in Fez
At that time, we travelled a great deal. I stayed in hotels that were comfortable, immaculate... but interchangeable. No matter the country, the rooms all looked alike. We spent the night there without ever truly feeling the place we were in. In Fez, the second most touristic city in Morocco, we felt the opposite.Here, in the medina as much as in the city's more modern districts, every door, every patio, every wall tells a story. Yet travellers often leave without having truly lived that atmosphere, as if they visited the city by day and left it by night. What if the place where you sleep were fully part of the journey? That's when it became obvious: crossing Fez, we understood that creating a hotel here would not simply mean opening an establishment, but extending the soul of the city. Offering a place where you don't just sleep, but where you inhabit Fez, even at night. That is how Fès Blue Hôtel was born, a 4-star hotel set in a modern district of Fez. We wanted its 33 rooms, its restaurant, its rooftop terrace with swimming pool and its fitness room to carry that same spirit: an aesthetic that blends modern lines with the richness of Moroccan craftsmanship, down to the reception desk, a true work of art created by our local artisans.The name "Blue" is no coincidence: it is a nod to the blue of Fez, the emblematic colour used in Moroccan ceramics for centuries, found throughout the hotel. Our decision was born from this simple idea: to allow travellers not only to visit Fez, but to feel it even in their sleep.

The 30 guest rooms at The Originals Fès Blue Hôtel feature a contemporary design that reflects the hotel’s modern façade and its spacious balconies overlooking the city. Soft greige tones paired with light wood furnishings create an atmosphere that is both warm and understated, resulting in timeless elegance. “A contemporary ambiance with a subtle Moroccan touch,” explains Rajae, referring to the many textiles inspired by traditional Berber rug patterns. Spread across six floors (served by a lift) and available in three categories Premium, Privilege and Suites all rooms offer generous space and can accommodate up to three guests.

While the restaurant at The Originals Boutique, Fès Blue Hôtel showcases the finest Mediterranean cuisine, it also celebrates Morocco’s iconic culinary traditions with flavourful tagines and its signature crispy pastilla, a true house specialty. The restaurant is open for lunch and dinner.

Known as Fès el-Bali, this UNESCO-listed medieval medina is the oldest district of the city, founded in the 8th century. Spreading across the hillside through more than 9,000 narrow alleyways, this open-air labyrinth is home to bustling souks, hidden fountains, and remarkable examples of traditional craftsmanship that showcase Morocco’s rich artisanal heritage. Once you pass through the impressive Bab Boujloud gate famous for its blue façade on one side and green on the other put away your map and wander wherever your curiosity takes you. Just make sure your phone is fully charged… you might need it to find your way back!
A living testament to Fez’s rich cultural and artisanal heritage, the city’s famous tanneries are among its most iconic landmarks. Today, only four remain, with the Chouara Tanneries being the largest and best known. Nestled in the heart of the medina, they continue to use traditional leather-making techniques that have remained virtually unchanged since the Middle Ages, including soaking, stamping, and colouring hides with natural vegetable dyes. From the surrounding terraces, visitors can watch artisans at work in the open-air dyeing pits a fascinating glimpse into a centuries-old craft. If you have a sensitive nose, it’s worth carrying a sprig of fresh mint to help soften the distinctive aromas rising from the tanning vats.
Founded in the mid-9th century, Al Quaraouiyine Mosque and University is recognised by UNESCO as the world's oldest university still in operation. It is also a masterpiece of medieval Islamic architecture, whose elegant design is believed to have been influenced by its visionary founder, Fatima al-Fihri. For the best experience, visit in the morning, when the surrounding streets are quieter, allowing you to fully appreciate the beauty of its façade. Please note that the mosque's prayer hall is not open to non-Muslim visitors.
Located around one hour from Fez, Volubilis is a remarkable former Roman city and a UNESCO World Heritage Site. Renowned for its exceptionally well-preserved ruins and magnificent mosaics, it offers a fascinating glimpse into Morocco’s ancient past. As you explore this once-important administrative centre, you can admire the Roman baths and the impressive Arch of Caracalla, built in honour of Emperor Caracalla and his mother, Julia Domna. The monument was once crowned by a bronze chariot drawn by six horses, of which only a single hoof remains today.
