FLAVOURS TO DISCOVER

Sandrine recommends exploring the Aubrac burons, the huts with their lauze stone roofs where shepherds sheltered from the Burle, the fearsome west wind. They made cheese in these huts too. Some burons have been converted into restaurants serving the authentic aligot, delicious mashed potatoes with cheese.
