It was in Mauritius, his native land, that Pajani learned the rudiments of the hotel business and gastronomy. With his diploma in hand, he multiplied his experiences in France, both in campsites and in luxury hotels as chef de partie, and it was in January 2019 that he landed his first position as hotel manager. Two years later, he joins Thomas Le Mentec at the head of The Originals City, Hôtel Les Dômes, Perpignan Sud. PALAIS DES ROIS DE MAJORQUE
More fortress than palace, this building is one of the oldest royal residences in France. It is built on a hill overlooking Perpignan and owes its name to the kingdom of Majorca, a powerful Mediterranean state that included the Balearic Islands, Montpellier and part of Roussillon in the 13th and 14th centuries. Perpignan was its capital from 1276 to 1344. The palace's bare Gothic architecture was later fortified by Louix XI, Charles V and Vauban.

CHATEAU DU CASTILLET
A symbol of Perpignan, the Castillet marks the entrance to the old town centre of the Catalan city. This red brick tower was built in the 14th century under the reign of Peter IV of Aragon and today houses the Casa Pairal, a small museum of popular arts and traditions. If you feel like it, you can climb the 142 steps of the tower to enjoy the view over the city.
