The decoration was dreamt up by Yvon Lebailly, who’s also chef sommelier. Every room is different, but they’re all inspired by the surrounding nature. The 23 rooms - attic, duplex or ultra-contemporary - have a unique atmosphere combining tradition and modernity. "We want to offer our guests a unique experience, really allowing them to get away from it all," explain the owners. There are also 7 apartments with their own terraces, raised on stilts at the edge of the forest. These bucolic living spaces can accommodate 2 to 5 people in absolute comfort.

It's presided over by Franck Quinton, an imaginative and passionate chef. The hotel also invites you to enjoy memorable moments of relaxation at Bar d'Aldo, an elegant club-style lounge. And, to start the day, Corinne offers a breakfast served on the terrace when the climate is right. "Everything is homemade: pastries, special breads, jams, cakes... all based on local products," explains Corinne.

"Franck Quinton, who's been a Michelin-starred chef since 1998, serves up creative cuisine in his own personal style. Franck has a passion for the treasures of the forest and brings out great flavours in his mushroom-based dishes, combining gourmet cuisine with local delicacies. With a taste for aesthetics and colour, subtle harmonies and surprising combinations of seasonal products, Franck defines his cooking as "natural and nature-based". "It’s something instantaneous - I want it to be as beautiful as the nature that surrounds us," he adds. Franck’s favourite fare is squab from Saint-André-de-Messei. His iconic dish: (sweet) mushroom macaroons.
